01Picking is the least destructive way into a lock and the slowest to learn. It works because manufacturing tolerances are imperfect. No two chambers are drilled in exactly the same place, so under rotational pressure the pins bind one at a time rather than all together, and a lock can be solved one pin at a time instead of all at once.
